Wednesday weigh in and Power of One week 3 check in!


Its that's time of week again! I looked back at my original post for the challenge start and I cringed a bit. Do you know I began weighing 168 and I set my goal to be down 18lbs?!? Am I nuts? LOL well we shall see, I do not want to set myself up for failure but I just do not feel like I am going to make that goal. It seems that now that I weigh much less than when I began my weight loss has slowed down. I do not see huge losses anymore. I am averaging 1-2lb losses every week. I know I know it seems good still but I guess I just find myself getting impatient.

Weigh in this week was good I am happy I am down 1.6 pounds :) So hopefully next week I can hit my next big goal of 90 pounds down! I plan to work extra hard this week to make it happen!


I began the challenge at 168lbs so I have lost a total of 4.2 pounds so far in the last 3 weeks. I need to kick it up a notch if I wanna hit my goal though! 18 pounds is no joke, but it will make my BMI to healthy and no longer over weight ;D

It was a great workout week, I hit the kettlebell 3 times, did Jackie Warner's total body circuit twice and I ran 17 miles in total. I also made it on the evil elliptical twice! I need to increase my miles the next 2 weeks because my half marathon is in 38 days!!!! I am kind of freaking out about it a bit all of a sudden I am feeling anxiety about not being ready. I know rationally I can do it, but my mind sometimes let this doubt creep in.

And incase you missed my tweet pics hehe I celebrated a huge huge non scale vicotry this week! I rocked size 4 pants!!!! I started this journey wearing a size 18 just 11 months ago. yesterday I proved to myself that with some hard work and determination you really can reach levels you never ever thought possible!

Chicken and Spaghetti Squash Marinara

I really did not know what to call this one. It was just delicious. I always keep a spaghetti squash around because well, I just love how versatile it is. I use it in place of pasta and rice to save points plus values and also be celiac friendly :)


Chicken Breast and Spaghetti Squash Marinara 

2 cup(s) canned stewed tomatoes   
2 tsp olive oil   
  1/4 cup(s) fat-free ricotta cheese   
  1 oz mozzarella, shredded, fat free   
  1 cup(s) cooked spaghetti squash   
1 Tbsp reduced fat Parmesan cheese   
  9 oz uncooked boneless, skinless chicken breast 
Spices: Garlic powder, Italian Seasoning, Onion Powder, Dried Onion

Well you start with the chicken breast. I took 1 teaspoon of olive oil lined a baking pan and 1 cup of stewed tomatoes and laid the raw chicken on top and covered the chicken with the tomatoes. I let the chicken bake about half an hour or so until it was no longer pink in the middle .

While the chicken was cooking I took care of the spaghetti :)
I used spaghetti squash I had baked the day before. I took a heaping cup of it and put it in a medium sauce pan with 1 teaspoon of olive oil. I let it simmer for about 10 minutes and then I added my spices. After simmer about 5 more minutes I added in my cheeses. I let that all simmer on low heat about 10 more minutes and it was done!

Just in time to pair with my chicken :)


It was so yummy! Like I do not miss pasta, the real thing at all! I cannot even remember the last time I had real pasta, or even the rice gluten free stuff. Spaghetti squash is so much healthier, and lighter. I do not feel sleepy after wards or guilty. And by saving on the carbohydrate points you can flavor it with the cheese and enjoy it!

I got 2 servings out of this I used 2 4.5 oz chicken breasts and I just put 1 breast away with half of the squash mix for lunch or dinner tomorrow.
Only 8 Points Plus per serving!
