I had to do some research and then decided I would do the bake and cook method. So you cut off the stems and then wrap them in tinfoil and bake. I had them on 350 for an hour. It was a success.
Of course I was not going to waste those nice big leafy greens! I cleaned them and boiled them to go with my chicken for dinner:
They were good with some garlic and onion. Tasted similar to Swiss chard or spinach.
Once the beets were cool all I had to do was rinse them off and that nasty skin really did peel off in my hands. I was surprised at just how easy it was.
I was left with 3 beautiful beets! I chopped them and put them in my salads!
I am a firm believer that you should always be trying new things. I was scared away by the ugly beets for many months I would see them hovering in the produce section but never brave enough to try them.
I am so glad I did! I love them! They are a little sweet but mild and juicy all at the same time. I liked having them in the fridge, I could add to a salad or heat one up and have along side a piece of chicken for dinner. They are so simple and yummy!

Be careful not to drip any of the beet juice on your clothes. It stains! :)
WOW!!! I am so inspired by your pictures. Yeah YOU!!! I need to lose 50#s Having a hard time getting motivated but When I saw your before and after pictures I realized that is what I need to do. Take a pic. of me now and see the difference as I lose the weight. So proud of YOU!!
