Sweet Potato Wedges

I spoke about these on twitter and got a lot of questions for the recipe. Well to be honest I was not sure how to respond, to me it is not a special recipe hehe just some work in the kitchen. But I realized it may be a new idea for some people so I took pictures and will explain them for you!

You start with your sweet potatoes and wash and scrub them.

Then I microwave mine for a few minutes. This makes them slightly soft enough to cut.

Then you slice them into wedges. (I leave the skin on for extra nutrients, some prefer to peel them)

I toss them into a big container and sprinkle cinnamon on and cover it and shake it up!

Then spread onto a sprayed cookie sheet.

And bake for about 30 minutes or so until tender and yummy!


They make a great snack. I bag them and weight them and write the points plus value right on the bag! I like to eat them cold after a workout :)



Oh ya and bonus? Peanut loves em too ;)

I'll be honest - not a big fan of sweet potatoes... that was until I tried sweet potato wedges.

I don't, however, eat them sweet. I use them in place of tator wedges or fries. Cook them in the oven with a bit of Pam cooking spray and some seasonings. :)

My favourite way to eat them is to peel them, slice into thick slices, brush with olive oil and chilli powder (just a little for me, I am a wimp) then bake.

Sweet potato wedges are one of our favorites! Quick and easy. I also make a sweet potato casserol. Peel sweet potatoes, mash in big bowl, add a little seasoning, pour in casserol dish, top with cinnamon and finely chopped nuts. Pooh loves it.

I usually bake wedges with a splash of canola oil and sea salt with either thyme or chili powder.:)

Love sweet potatoes!!
I've made them just as you did minus the cinnamon (I should try that though). I also like to cube them up and just toss them into a dish and microwave. That's why I love sweet potatoes, cuz their sweet and you don't need to add anything to them for them to taste great!

Mmmmm...that sounds so good!! I think I would love to try this recipe. One of my favorite ways to eat sweet potatoes is as a baked potato but cooked in the crockpot. I just wrap it in foil and cook it in the crockpot for 4-8 hours and then eat it like that. Last time I cooked them I didn't put anything on them and they were delicious!
