Weigh In Wednesday

Well this was the final weigh in for the Holiday Hoedown challenge at the Shrinking Jeans.
I weighed in 2.2 pounds less than last week!!!!!

I started the challenge at 177.2 and am ending it at 170.2. That is a 7 pound loss in total for 5 weeks. I set the goal to be 12 pounds so I missed it by a lot. I am a little dissapinted but it is the holiday seasons and I was not as stringent as I was before. BUT I think back to last year and from Thanksgiving to Christmas last year I probably gained 7 pounds! So you know what I will take this 7 pound loss and be happy and thankful!


I am so close to the 160s I can taste it! I cannot wait to get there, then my real goal will only be 30 pounds away and that's exciting and scary all at the same time. I feel like I am so sure of losing weight, setting goals and making them. I am fearing the unknown of maintaining and how I will keep on track when there is not weight loss number goal. But I look forward to the challenge!

Vegetable Lasagna Points Plus style

I finally tried the vegetable lasagna that Brittany recommended from this website. It was delicious and worth all of the work that I put into it! It takes a traditional lasagna recipe and uses zucchini and summer squash in place of noodles.
The recipe requires you to cut the squash in slices and roast it for about 15-20 minutes until it is golden color:

While those were cooking I prepared the ground turkey. I used 99% fat free gound turkey to keep the Points Plus low :) I chopped the onion and added it in with the garlic to cook into the meat.


Once the meat was cooked I added in the ground tomatoes and simmered it for about 10 minutes.

Then I blended the ricotta with the egg 1/4 cup of ff mozzarella and some parsley. I layered the lasagna with squash, cheese blend, spinach and then sauce.

I baked it for about a half hour at 375. Right before I wanted to take it out I put on 1/4 cup of the mozorella and baked it about 10 more minutes. It looked pretty good


It tasted damn good!


 I cut it into 4 pieces so I could take it to work each day and it would be my usual 6 points plus lunch. It tasted even better the next day.

Here is what I used:

2 cup(s) zucchini   
  2 cup(s) sliced summer squash     
  1/2 cup(s) onion(s)   
1 Tbsp minced garlic   
  1 large egg(s)   
  1/2 cup(s) shredded fat-free mozzarella cheese   
  1/2 cup(s) fat-free ricotta cheese   
  2 cup(s) canned crushed tomatoes   
  16 oz 99% fat-free raw ground turkey breast     

The total recipe is 25 points plus. You can divide it up as you choose. For the holiday it would make a great dish and you could easily get 6-8 servings out of it to lower your points plus value!
