Cleaner Eating Habit

What exactly does this mean to you?

There has been some buzz on the new Weight Watchers program and I for one am very excited, I have heard it will encourage more clean eating and less pre packaged foods etc. To me it seems this will fit right into my current eating habits. I thought today I would share a few thoughts on what I have been eating lately and how I knew my eating habits had really changed.

It all started a few months ago after I hit the 50 pounds lost mark. I was doing well but I felt I needed to take things up a notch because I was not seeing the results I wanted particularly in my mid section.I consulted a very dear friend of mine Drea and she suggested abs are all in your diet. Now she is my all knowing personal trainer, super fit, super mom so I knew she had to be correct.

On the agenda was to reduce carbohydrates, sodium, and sugar. Focus on vegetables, lean protein, and some fruits and dairy. Honestly the easiest to ditch was the carbohydrates, having Celiac helps me out in all sorts of ways with this because gluten is in every baked goodie so it was easy to avoid all together. It also prevents me from even eating those yummy Weight Watchers bars they sell int he centers. This helps because to eat cleaner I wanted to avoid pre packaged stuff a lot.

Next was the sugar. I did not consume a lot but still I wanted to cut out all together so I switched to Truvia Natural sweetner in my morning cup of coffee. I made sure if I broke down and needed and afternoon latte that it was a skinny one (skim milk and sugar free syrup). Sodium has probably been hardest to cut, it is so much of everything! I started using Mrs. Dash seasonings for my lean proteins and on egg whites. Then I started cutting back on the cheeses I was using with sodium. Little by little again it did not happen over night, I began making changes.

I began to look for food as a means to satisfy my hunger and fuel me through my day and workouts. I never even thought this was possible. (Stay tuned a post coming next week on binge eating, a dual project for school will explain my horrible relationship with food). So yes when did I finally realize this would be a life long habit, the other day after a long meeting I was completely famished. For many reasons my food intake had been limited all day and I was just plain starving. I got to a restaurant and instead of saying oh my gosh I am so hungry I need........... I said I am starving I need some protein!

My friend laughed at me and said do you realize what you just said? I thought for a minute and said yes I know what I said. I was so hungry and I knew I needed something to satisfy me and I knew my lean protein could. I was for the first time out loud looking for something just as fuel not as a yummy decadent treat, or a fancy dinner. It was for me a break through and probably one of the biggest I have had in my last 8.5 months. Well to end that story I ended up ordering a small side salad with light italian dressing and lime chicken breast grilled and a jicima salad. It was delicious and satisfying and I did not feel guilty for eating it and I left full and satisfied.

Here is what my tracker looked like yesterday:

Egg white quiche 3pt
Coffee 1pt
Chobani Vanilla greek yogurt 2pt
Baked apples and 1 tbsp fit granola 3pt
WW cheese stick 1pt
Side Salad with ff dressing2pt
Chicken breast 5pt
Bannana 1pt
Pop chips 2pt
Steamed veggies and ff parm cheese 2pt
Chicken breast 4pt
Almonds 2pt
Total points consumed 28 Daily allowance is 25. I distribute my 35 weekly allowance points over the week to get in the healthy foods I like. I do not use them as "cheat" points or things like that, once I started doing it this way I stayed successful.

Weigh in Wednesday BIG CELEBRATION =)

Today was a great day!! I went to visit my brand new store which I will be opening in 2 weeks and I am really looking forward to it!

On my way home from work I went to weigh in at Weight Watchers because it is Wednesday and I want to stay on track :)

I was super excited to finally say hello to the 170s and good bye forever to the 180s and be down 3.6 pounds!!!!!!!!!!!!!!!



 So 35 weeks on Weight Watchers and I am almost at my first huge goal of 75 pounds gone!!!!
BUT BUT BUT I am VERY HAPPY BECAUSE................

I AM NO LONGER OBESE!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!

MY BMI IS 29.7 that means I am just over weight now and that is music to my ears! =)
My BMI began at 42  yes a whoop whopping morbidly obese 42 and now I stand before everyone today and can say I honestly took obesity and threw it out the window forever! I kicked obestiy's ass and I took no prisoners :)

I am eccstatic, I am over joyed, I am over the moon happy!


So today I am celebrating and enjoying how truly amazing I am. I have achieved things these last 8 months that I never dreamed possible. I have improved my health, and ensured that I will be here and stronger and a better mom and to me there is no greater achievement. I am living proof that with hard work, determination, diligence, and persistence you can do ANYTHING you set your mind to.

Thank you to everyone who has pushed me, helped me, supported me, and picked me up when I felt I was falling along the way. It is with the support of my friends, family and my virtual health and fitness bloggers who have helped me achieve this great goal and who will keep pushing me to go farther :)

What I Cook to Prepare for the Week

It is no secret that I like to cook. I cook almost every night here at home for dinner and on Sundays my one day off from work every week I cook things for the baby for her meals all week and I make my own quick lunches and breakfasts.

Everyone always is amazed when they see me the first thing they say is wow you do not look like you eat anything. This kind of surprises me every time because in all honestly I eat so much! I snack and eat small meals all day long and this is what has kept me successful and on track with the Weight Watchers program.

So people are often surpiresed and ask me what did you eat otday or what are you making this week? So I was cooking yesterday and said to myself let me snap some pictures so I can share with my favorite people :)


That is usually what my oven looks like each week hehe and that is not even all of it!

I start each day with a piece of this for 3 points Egg White Veggie Quiche



A mid morning snack lately is Chobani greek yogurt the vanilla flavor is only 2 points and it is so creamy and packed with protein that I cannot resist it! It is much more filling and tasteful than the weight watchers yogurt. But of course I make it into a mini meal when I add these:

Yes those are apples!!! I wedge them and toss them in 2 tsp of cinnamon,2 tsp of splenda and 1 tsp of nutmeg. I use 7 apples and divide it up into 3 portions so it usually makes it 2 points per serving. But all you have to do is weigh the apples ahead of time or whatever you want and figure the points that way.
I throw them right into my yogurt at work and I am satisfied for hours!

Lunch this week will be on the run no microwave to heat up my soups and stuff so I had to prepare ahead of time some chicken tenders:
This is my key point to posting this! Do you see the individual chicken already bagged and weighed and points written on the bag itself? In a second at work I know what I am eating and how much points it is! I prepare it all ahead of time to make things simple and easy to follow! Plus chicken is good cold, if I am running around and have no time I can eat one in the car on the way somewhere. It is just important to be prepared :)


Dinner will vary but I had a spaghetti squash left over so I had to use it before it went bad and I Spaghetti Squash Pie:
I cut it into 4 pieces and had one for dinner last night and froze the other 3 in separate containers. In a pinch I have it all ready to go!

Weight Watchers Chat!!!!!

 I am so excited to be working with Brittany on this new venture a Weight Watchers chat!!! You know how strongly I feel about it I even wrote an essay for my nutrition class about Why Weight Watchers Works. So please join us :)

Brittany and Colleen will be hosting a weekly Weight Watchers chat on Twitter to have one place where you can come and chat and get to know everyone who is following the plan! Brittany has been on Weight Watchers for 1 week and has lost 2 pounds doing it! Colleen has been on Weight Watchers for 8 months and has lost 71 pounds doing it! They are two friends trying to spread the word about this great program and reaching out to help people stay on track :)

Fudgy Pumpkin Brownies Weight Watchers Style

I saw this awesome recipe from the lovely SpaBettie it was featured here at Fitblogger this week.

I do not venture out into the baking world much since really getting into Weight Watchers and having Celiac but with the holidays coming I know I need to find a few good desserts to serve at Thanksgiving and these looked so delicious! So thank you Bettie I love your recipe and I enjoyed it!




Here is the recipe I made I modified it a bit to cut out some calories and lower the Points value for my Weight Watchers plan :)


Ingredients


1 cup(s) SPLENDA® No Calorie Sweetener   
1 can of plain canned pumpkin   
1  egg   
3/4 cup(s) unsweetened cocoa   
1/4 cup(s) semi-sweet chocolate chips   
1/4 tsp table salt   
1 Cup Bob's Red Mill gluten free flour   
1/2 tsp baking powder   

Instructions

Combine splenda, pumpkin and egg blend well.
Add flour, salt, baking powder and cocoa powder blend together
add chocolate chips
Bake at 350 for 50 minutes or until knife comes out clean
Cut into 8 bars
Each Bar is only 2 points!!!!!!!!!!

The batter was definetly thick and I was a bit worried that i did something wrong:
I spread it into the pan I always bake on wax paper when baking gluten free beacuse it just sticks to the pan if you do not:

I baked them and was amazed at how they looked and when I was cutting them they were huge!

 
1 bar is only 2 points! You know what I ate one and it was delicious!!! I put the rest in their own small zip lock baggies and froze 6 and kept 1 in the fridge for later on this week when I need something sweet :)
This is a great alternative and more natural than buying those pre-made Weight Watchers bars I think and much more delicious :)
