Breakfast recipe!!!!


Fall is upon us and there is nothing like a warm filling breakfast to jump start your day! I love Bob's Redmill gluten free oats! Any regular oatmeal will do for this recipe but for some the celiacs out there like me make sure its gf of course :)

All I do for this simple breakfast is take 1/2 cup of oats and boil them with 1 cup of water, 1 apple diced up, some cinnamon, and 2 packets of truvia. The way the apple cooks with the oatmeal and cinnamon just makes this oatmeal taste like a piece of warm apple pie.

You know its done when the water is gone and the oatmeal is soft, if you prefer it softer just add more water.

The entire bowl of oatmeal you get is only 4 points! (I weigh the apple and use  point worth some apples may be 2 points)

That is it super simple, super quick and very yummy apple pie oatmeal as I like to call it :)

I usually pair this with some scrambled egg whites for protein and I feel full for hours!!!

I made the same thing with peaches one time and it was yummy too! I want to try some pumpkin next. Oatmeal is something so simple and healthy and when paired with the right combination it can be very tasty too!

Ready for the 5K ?

It was a beautiful night, one of those early fall crisp breezy balmy evenings. All the way home I was just getting excited to get outside and run. So I got home bundled up my darling daughter in her little pink hoodie and sat her in the stroller and off we went!

I ran, it seemed like it was easier. I began thinking as I was running OK I got this I can do this. I have one more week until my very first ever 5K race and tonight for the first time ever I felt ready and felt like I was becoming a runner. I do not mean a professional or anything but just someone who runs and enjoys it. I did not have to stop every 3 minutes and walk because I was so out of shape.I did not avoid the big hill or slow down as I crept up it. I took every challenge on strong and got through a solid 12 minutes of running without stopping!

I walked for 30 seconds and then I just kept running and pushing that stroller. It felt so good just to be able to keep going and going. I did not want to stop tonight, maybe it was the cool weather I just felt too good to stop. Well I eventually did have to stop hehe because my baby was getting tired.

So I ran for 40 minutes!!!! I burned about 475 calories when I checked my polar monitor! I felt awesome.

After the run I stretched a bit and then did Jillian Michael's No More Trouble Zones. Honestly after doing the new Shred it with Weights, No More Trouble Zones felt like a comfy old pair of jeans! Hehe it was nice still a decent workout and I still burned calories and sweated but it was not the degree of difficulty that Shred it With Weights is! I will do Shred it With Weights tomorrow when I do not run. Running and that video in the same day are a bad combination :)

Burned a nice amount of calories :)

Who made it to Onderland???? ME :) Weigh in Day!!!!

I made it to onederland today!!!!!!!!!!!!!!!!!!!!! Can you tell I am just a tad bit excited? hehe

I felt so light after getting off that scale. I know it sounds silly but I just did. I cannot really remember the last time I weighed under 200lbs. If you had told me last year i would be here right now staring at this little weight watchers weigh in sticker in shock, nope I would not believe it!  I mean that brings my total loss to 54.2lbs!

At weight watchers we started talking about it and trying to picture how much weight we have lost and physically picture it, makes your head spin a bit.

54lbs is roughly the weight of 6.4 gallons of water!
54lbs is the weight of a small child probably between 4-6 years old!


I could go on and on but you get the point. When you look at your weight loss really look at it imagine how much you have lost in terms of physical items or things. It may help you realize that you do rock and you have come very far!

Review of Shred With Weights!!!!


Well I went out and bought a kettle bell today.It was 15 lbs that is the only one they had at the store, I think I may return it though and look for an adjustable one.

I was excited to get a coupon for 10% off some running shoes and an offer to try Jillian's website www.jillianmichaels.com for 30 days for free. I think I may definitely give it a whirl and of course I will let you all know how it goes :)


In the video Jillian recommends using a kettle bell for the routine and getting an adjustable one so you can add weights as you get better so I plan to return this one and get an adjustable one. Do not worry if you do not have a kettle bell, you can use a hand weight.

I do recommend if you want to continue doing the video you invest in a kettle bell, it was fun and a different kind of routine and I did enjoy it!

There are 2 sections part 1 and 2. 1 is for beginners and I recommend doing it first before you venture into the 2nd one. I just did part 1 tonight. The video began with some stretching and then Jillian begins kicking your butt! You go through some serious routines and whip that kettle bell around.

The video is structured same as her other 30 day shred and other videos. She does 30 second training intervals and combines cardio and weight training. The cardio is unlike any other she has done before though, it is all combined with the kettle bell. I loved it! The hardest cardio move was the squat jumps! They come up twice in the video and hurt everytime :) Then she works your abs with a crunch combined with a press. It is tough, but she keeps you motivated with her usual comments. I think the move I had the most fun doing were the kettle swings, you really swing the kettle bell pretty hard and switch it off from hand to hand. It truly is a different kind of workout than your standard hand weight routine. And it really was fun :)

I wish I had done it before going to the gym and running 3 miles!!!! I was dead by the end of the video but it was a good kind of dead :) The workout is 25 minutes long and it begins with nice warm up and ends with a nice cool down.

I definitely recommend this video to anyone looking to mix up their normal routine and looking for something different than a hand weight workout! I loved it and tomorrow night I intend to both parts.I ordered the video from amazon.com and it was only $9.99. I bought one for myself and 1 for a friend and gave one copy away. I think it is worth the $10!

It really burned lots of calories too! I went for a 3 mile run on the treadmill for 30 minutes and had burned 350 calories. Well I came home and went to work with that DVD and burned roughly another 360 from start to finish!






Soccer and Rollerblading workout!!!!!!!!

Well I had my rest day today but yesterday was cardio day and instead of going to the gym I decided to take advantage of the beautiful crisp fall like weather and be outside!
I got a soccer ball and went with the neighbors to the field and we ran around for about 30 minutes playing soccer. It was not only fun for me but fun for them they are 3 and 5, and the dog had fun too! I wore my monitor because I was curious if I would even burn a lot of calories and of course I did!

Then I came home and slapped on my skates and decided it was time to hit the road! I went rollerblading for about  30 minutes. I love roller blading I really think there is no better feeling than soaring down the street with the breeze cooling you down. I could do it everyday.

It turned out to be a fun afternoon and I got in my cardio for the day!

64 minutes of cardio outdoors doing fun stuff! what and I burned almost 500 calories?? Awesome way to spend the day playing have having fun. Exercise does not always have to be a gym routine or workout video or a run. it can include some fun too :)

Corn Chowder with Tofu!!!!

I had some Light silken tofu in the fridge and was unsure how to use it. I came across some recipes for using it in soups and decided to merge it into a corn chowder with weight watchers in mind.

I know what you may be thinking yuck tofu, but you cannot even taste it in this warm hearty stew and it adds filling protein to keep you fuller longer. I liked how it thickened the soup too! My daughter even enjoyed it 


Corn Chowder with Tofu!

Ingredients


16 oz lite silken tofu   
3 item(s) uncooked baby potatoes   
1 Tbsp olive oil   
1 cup(s) fat-free skim milk   
2 cup(s) frozen corn kernels   
1 tsp table salt   
1 tsp black pepper   
1 tsp garlic powder   
6 serving(s) water   
1 cup(s) onion(s)   

Instructions


Chop onion and saute it in the pot with the olive oil until golden
Then add the milk and 2 cups of water
Add chopped potatoe and spices
Let simmer for 10-15 minutes
Blend tofu in blender and add into pot with spices and corn and stir
Cook for about 20-30 minutes until potatoes are tender

Makes 6 servings and each serving is only 3 points!!!!!
