Recipie of the day!

I am calling this one shrimp stir fry. I will try to upload and or create a new recipie a few times a week for you guys. Today I was starving and nothing in my cabinet looked good so I thought I would use some of the cooked frozen shrimp and green beans I already had and make a quick stir fry. I like stir fries because you can control exactly what you want, pick your fave veggies and protein and just saute it in a little olive oil and whatever flavor you like.
I always find them to be very filling and satisfying and pretty low in points! and as you can see if you know the WW plan we are using filling foods which are foods that are low in points but filling and healthy!
 
  Shrimp Stir Fry

Servings:  2


Ingredients

8 oz cooked shrimp   
1 cup(s) frozen cut green beans   
1 1/2 cup(s) cooked white rice   
2 tsp olive oil   
1/2 cup(s) fat-free chicken broth   
2 serving(s) Lawrys jerk seasoning   

Instructions


Thaw shrimp in warm water and peel off the shells.
Boil water and cook the white rice seperatly
Combing 2 teaspoons of the Lawry's Jerk Seasoning marinade with 2 tsp of olive oil and 1/2 cup of ff chicken broth
let that simmer for 5 minutes
once hot toss in shrimp and cooked green beans or any other veggie of choice
saute for 5 minutes until hot and done!
toss in half of the shrimp mixture over half of the rice
serves 2

Workout for today!

I was so tired tonight it I literally had to force myself to workout. but I did it :) I kept telling myself cmon just a little longer you are almost there.
so I did an hour and 15 minutes at the gym. I burned 589 calories :)
I ran on the treadmill at a pace of 10 min per mile for 23 minutes. then I did my weight training routine. last I did the elliptical machine for 25 minutes

How far have I come?


Sometimes it is easy to get discouraged. Yes we all do. But me when I get discouraged I remember why am I doing this and really if I step on that scale and I do not lose weight or I even gain a half a pound in a week, I come home and look at this. I look at the woman I used to be and I look in the mirror and see just how far I have come. I pull out that size 18 pair of pants and just shutter at how big I used to be. I keep reminding myself everyday of the bigger picture that I have come very far and I can keep going and can achieve my goal weight. I went in to give birth to my daughter 11 months ago weighing the most I ever have in my life at 272lbs. Today I weigh 212. So in less than a year I have lost 60lbs so I figure by the time she is 2 I should be right where I need to be. These pictures are part of a collage I made when I started Weight watchers until I reached my first big milestone of 10%.

Workout for today!

yup as you can see I did an hour and 9 minutes and burned 436 calories :)
Tonight I did 45 minutes of cardio on the ellptical machine and Jillian Michaels video: No more trouble zones

ME!!!!!!!!!!!!!!!


OK here it is the long awaited updated picture of me!!!! I will post my earlier pictures later on this week. But I took this tonight when I got my WW results:

Weigh in Day!!!!!!!!

OK so Wednesdays is weigh in day for me. I head into Weight Watchers after work and step on that scale. Well I was very happy to recieve my next 5 pound sticker!!!!!!!!!!!

In total I have lost 40.2 pounds since I began WW on Feb. 24th.

Snack time

so here is one of my favorite snacks right now. Glennys soy crisps. the entire bag is only 2 WW points! now that's what I call a fufilling snack.

workout for today

so I did an hour an 22 min as you can see and burned 588 calories
I ran 1.5 miles then did 22 min on the elliptical and did JM no more trouble zones workout video

The tools

So I have several tools I use everyday when I workout:



This is my Polar FT 7 heart rate monitor. My lovely bf got it for me for my birthday this year and I do adore it. It records my heart rate while I work out and it tells me if I am burning fat or performing fitness, how many calories I burned and how long I worked out for. I love it.


This is the protein drink I drink right after my workout. It is unique because it has no sugars, carbs or fat. One serving is a 12 oz shake and it is lowest calories on the market. It is only 2 points! It was recommended to me by my friend who is a personal trainer she is awesome!!!! I consult her so much and nag her so much with all my work out/diet questions and she always gives me the best advice! Big shout out to the #1 fit woman A you rock and I love ya!!!



This is the elliptical machine after one of my workouts. I run on it every time I go to the gym and I have come a long way already. I remember when I first began on the elliptical I could not stay on for more than 15 minutes without being short of breath and exhausted. Now I do 38 minutes on it.


These are my running sneakers. When I put them on I feel like I can tackle anything!

August 3rd 2009

That is the day my journey really began. It is the best day of my life. The day my precious daughter was born. When I looked into her eyes I knew I was complete and I knew I wanted to give her everything the world has to offer. This is also the day I realized that I needed to get into shape and I needed to be healthy for her sake and my own. Without my good health I knew I could not properly care for her and I want to live forever and watch her grow up into a strong woman.
So thus I committed right then and there that I would eat healthy and start exercising and begin the long journey to being fit.
