Chicken Eggplant Parmesean PointsPlus Style!

Well sometimes I like to think of myself as creative in the kitchen. Tonight I had a yummy creation that I would like to share!

It is my first official Points Plus recipe!


Chicken Eggplant Parmesan

Ingredients


2 tsp olive oil   
  2 cup(s) canned stewed tomatoes   
  1 lb uncooked boneless, skinless chicken breast   
  2 cup(s) raw eggplant  sliced thin 
  1 cup(s) zucchini sliced thin
  2 oz fat-free shredded mozzarella cheese   
2 Tbsp reduced fat Parmesan cheese   
1 Tbsp minced garlic   

Making this literally took 7 minutes to throw together! I put the olive oil in, then half the crushed tomatoes. Then I put in the chicken breast and some eggplant. Then I put in half the cheese and topped it with some more crushed tomatoes. I baked it at 375 for about 45 minutes covered, then I took it out and topped it off with the zucchini and the rest of the cheese and crushes tomatoes. I baked it for 15 more minutes and viola it was done!

I had used 4 thin sliced chicken breasts, so each serving is 1 chicken breast with some of the veggies:

It was delicious. The eggplant melted in my mouth and the chicken was so tender and moist. It was perfect really. And at only 5 points plus per serving it fits nicely into my day!

That sounds so good, Colleen! Thanks for sharing. This will definitely have to get into the rotation. Now, if you have a way to disguise eggplant from the family, I'd love to hear it :) LOL I love it, but everyone else is afraid of it!
