Scallops and Veggies

Well I must admit I got tired of chicken and turkey hehe so I bought some nice large sea scallops this week and came up with a nice little way to cook them and keep them gluten free and weight watchers friendly :)


 I took a half a pound of scallops and cooked them in 1 teaspoon of light olive oil. I seasoned them with some garlic, onion powder and topped them off with a little Italian seasoning and 2 teaspoons of GF bread crumbs from my favorite gluten free bakery ever All Can Eat. I broiled them in the over for maybe 20 minutes, until they were fully cooked.

While those were cooking I started on the veggies. All I did was slice some zucchini, summer squash, onion and tomato and saute them all together in a large pan. I put in the zucchini and squash first and let it cook for about 10 minutes and added the tomatoes at the end. I topped them with 1 teaspoon of grated low fat Parmesan cheese for a yummy finish.

The total plate you see is 6 points. It was delicious and it made me realize that there is more to eating healthy than chicken and fish! It is so important to keep switching up recipes and trying new foods and I enjoyed dinner so much tonight!
