The trick with the egg whites is all in how you cook them. Of course they are bland, of course they have much less flavor than eggs. However, with the right spices and veggies you can turn those blah egg whites into an exciting fufilling breakfast.
So this morning I scrambled them up with my veggies and took a picture and thought I would share my favorite way to eat egg whites.
Simple and easy and a great breakfast. See how the veggies blend in with the egg whites and make a nice sauce it softens the toast perfectly!
Chop veggies you want. I used Tomato, zuchinni, and vidalia onion.
Spray pan with spray (I prefer to use a small saute pan to keep everything together I have tried in a bigger frying pan but it dries out)
I saute the onion and zuchinni first about 10 minutes to soften them since they take longer to cook then I throw in the tomato and saute for 5 minutes together when I put the tomato I put in spices I want I usually use garlic powder and a pinch of goya seasoning salt.
Then I put in 3/4 cup of egg whites.
Just keep scrambling it together and let everything cook.
While that is cooking I toast 1 piece of gluten free multigrain bread from All Can Eat Foods (they make the best gluten free bread ever!)
Put the toast on your plate dry (saves points)
When the egg whites are cooked I put 1 slice of Weight Watchers orange sliced cheese on top and scramble it in.
Then I pour the mixture over the slice of toast and viola!
The breakfast is a total of 5 points! 2 for the toast, 2 for the egg whites and 1 for the cheese.

Oh I am right there with you! I LOVE egg whites! I never actually cared for egg yolk (like hard boiled egg style). I admit that it took some time figuring out how to cook them right, but they are delish! I like mine dry, BUT love loading them up with lots of veggies! Can't wait to try your recipe!
Egg whites are a great source of protein. I alternate between whites and Egg Beaters. Occasionally, I eat a whole egg or two. I like to make scrambles with sauteed onion, mushroom, peppers and whatever else I ave around and finish them with a little 2% cheddar and salsa. :D
